If you can find it, go with pork jowl bacon because it is super cheap and delicious. If the thought of eating smoked pork cheeks doesn’t sit well with you, you might not be ready for this lifestyle.

2 Red Potatoes in 5mm slices
1 Yellow Onion, julianned
2-4 Slices of Pork Jowl Bacon
Fresh Cracked Pepper
Red Pepper Flakes
Heat a cast iron pan. Render fat from Pork Jowl. Start frying potatoes in fat. Add salt pepper and red pepper flakes. When potatoes begin to soften, add onion and cook until carmelized. If it pleases you, add shredded cheese. Enjoy.
